Cashew butter cookies!

Super simple!  Super delicious!  Even people without dietary restrictions think these are tasty!  This recipe is a modification of this peanut butter cookie one from


  • 1 cup cashew butter
  • 1/3 cup honey
  • 1 egg
  • 1/2 tsp vanilla
  • dash of salt


  1. Preheat the oven to 325
  2. In a bowl, mix all the ingredients together.  If you leave the egg till last, you can taste after mixing cashew butter, honey, vanilla and salt and adjust the taste to your preferences (add a little more honey or a little more salt if desired).
  3. Spoon the mixture onto a cookie sheet lined with parchment paper
  4. Bake for about 15 minutes.  The bottoms will turn golden brown, and the tops will just start to brown when they’re done.
  5. Take them out and let them cool


These cookies sap your willpower to only eat a few!  A batch rarely lasts more than 24 hours for me, and thus I try not to make them very often.  When I eat an entire batch of cookies in a 24 hour period, I give a self-satisfied smile and message my husband to tell him that “fat wife ate all the cookies :D”.
